The LoCooker, a new- concept cooking appliance with low energy and water use ,and low emission Conventional hob cooking using water has an energy efficiency of about 10% so that 90% is lost but has to be paid for whenever this activity is undertaken. Typical microwave efficiencies are similarly low. The LoCooker has already demonstrated energy efficiencies in excess of 50% with excellent prospects for moving this higher. The ubiquitous nature of hob based cooking using water is such that the potential energy saving in enormous if this new technology is widely adopted The main competitor products to the LoCooker use between 20 and 40 Litres of water (Sous Vide water bath) and 80L/hr(Combi Oven) The LoCooker uses between 1 and 1.5 litres. Even this is not lost but is usually turned into a rich stock. A wide range of food can be prepared with the LoCooker including vegetables, fish meats eggs and rice with the advantage that each foodstuff can be cooked at its optimum temperature, almost always less than 100C, thereby retaining flavour, texture and appearance. There is evidence that vitamin retention is also improved when cooking at these optimum temperatures. The LoCooker also enables the seasoning and flavouring of the food during preparation. A prototype has been trialled with a number of high profile Chefs, mainly in London. They all speak highly of its ability to provide high quality dishes to their own recipes and have demonstrated its use over a wide variety of foodstuffs.
