The chocolate industry is in trouble, climate change will start to deplete the cocoa farming industry in the next 5-10 years, meaning supply will drop by as much as 28%. **That's right chocolate will start to run out!** This project will progress us from our current stage of initial research and proof of concept (TRL3) through to our technology being progressed and demonstrated in a commercial chocolate environment (TRL6). Practically this means further taste and process testing on our product to match it as closely as possible to chocolate and then collaborating with a leading UK chocolate maker to test our product in their factory .
